# Expert Advice:

01 -
  • They're basically edible art that tastes like birthday cake, so you get to feel creative and indulgent at the same time.
  • Once you nail the technique, you'll find yourself making them for every gathering because they disappear faster than you'd expect.
02 -
  • Never use liquid food coloring with chocolate—it will absolutely ruin your coating by making it seize and become thick and grainy, which I discovered while making my second batch.
  • Chilling those cake balls properly is the difference between pops that stay on the stick and ones that plummet into your chocolate bowl in front of an audience.
03 -
  • Make your cake balls the night before you plan to dip them—extra chilling time gives you more forgiving pops that won't slip off the stick.
  • Keep your chocolate bowls in a warm water bath while you work so the coating stays at the perfect consistency without overheating.
