# How-To Steps:
- Rinse the rice in cold water. In a saucepan, combine water or broth with salt and bring to a boil. Add rice, reduce heat to low, cover, and simmer until tender, about 15–20 minutes for white rice or 35–40 minutes for brown rice. Fluff with a fork.
- In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Add chicken and toss until well coated with the spice mixture.
- Heat a large skillet over medium-high heat. Cook the chicken for 5–6 minutes per side, or until fully cooked and browned on the outside. Remove from heat, let rest for 5 minutes, then slice or dice as desired.
- In the same skillet, melt butter over medium heat. Add corn and sauté for 4–5 minutes until lightly charred. Transfer the corn to a bowl and let cool slightly. Add mayonnaise, sour cream, chili powder, smoked paprika, crumbled cheese, lime juice, and chopped cilantro, then mix well.
- Divide rice evenly among four serving bowls. Top with sliced chicken, generous portions of street corn topping, and avocado slices. Garnish with fresh cilantro and lime wedges. Add hot sauce if desired.
