# What You'll Need:
→ Tomato Jam
01 - 1 cup ripe tomatoes, chopped
02 - 1/4 cup granulated sugar
03 - 1 tablespoon apple cider vinegar
04 - 1/4 teaspoon salt
05 - 1/8 teaspoon ground black pepper
06 - 1/8 teaspoon ground cinnamon (optional)
07 - Pinch of red pepper flakes (optional)
→ Grilled Cheese
08 - 4 slices country-style or sourdough bread
09 - 4 slices sharp cheddar cheese or cheese of choice
10 - 2 tablespoons unsalted butter, softened
# How-To Steps:
01 - Combine chopped tomatoes, granulated sugar, apple cider vinegar, salt, ground black pepper, and optional spices in a small saucepan. Bring to a simmer over medium heat, stirring occasionally.
02 - Lower the heat and continue to cook for 18 to 20 minutes, stirring occasionally, until the mixture reaches a thick, jam-like consistency. Remove from heat and allow to cool slightly.
03 - Spread softened butter generously on one side of each slice of bread. Place two slices, buttered side down, on a skillet or griddle over medium-low heat.
04 - Layer sharp cheddar cheese slices evenly over each bread slice, then spoon 1 to 2 tablespoons tomato jam onto each. Top with remaining bread slices, buttered side facing up.
05 - Cook sandwiches for 3 to 4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
06 - Remove from skillet, let cool slightly, cut in half, and serve warm.
